Mini Corn Dog Bites

I have been watching football games all week and looking for awesome appetizers to suit your college budget without compromising fun, coolness, and of course, taste!  These little bites are about the easiest thing I have ever made, and you get the classic 'corn dog' flavor without the fry or the fat.


These take about 10 minutes to throw together, and 8 minutes to bake! Doesn't get any better than this unless your team wins the trophy!

Equipment:
12- or 24-count Mini-Muffin pan
PAM Spray
Mixing Bowl
Whisk

Ingredients:
1 box Jiffy Corn Bread ($0.89)
1 egg ($0.25)
1/3 cup milk ($0.25) / ($0.50) if you buy organic milk
Quality franks, cut into 6 pieces per link ($0.55 / per frank)


Mustard
BBQ Sauce 
Ketchup

Instructions:
1. Wash your hands.
2. Preheat the oven according to package, usually 400F degrees.
3. Combine the ingredients for the muffin mix in a mixing bowl and let sit 4-5 minutes.




4. Fill the mini-muffin tins about 3/4 full.


5. Cut the franks into 5 or 6 pieces and press one section into center of muffin.



6. Bake at 400F degrees x 8 minutes.



7. Have your platter with condiments and dipping sauces.
